The award-winning Rancho Valencia Resort & Spa in San Diego’s upscale neighbourhood of Ranch Santa Fe, has re-opened following a 10 month, US$30 million property wide refurbishment. The resort’s 49 all-suite, guest rooms averaging 1000 square feet – among the largest in the United States – now feature custom-made, lavish rustic furnishings, walk-in closets, spacious bathrooms with deep soaking tubs, expansive living spaces, fireplaces, intricate design pieces and private patios boasting private fireplaces and whirlpools. The resort also features a new signature fine dining restaurant, Veladora, and adjacent bar, The Pony Room. The restaurant takes inspiration from the luxury resort’s hacienda-style and highlights executive chef, Eric Bauer’s coastal ranch inspired cuisine.
The Pony Room bar features the first offerings of sparkling wines on draft in California, high-end wines on tap, and a wide selection of spirits including more than 100 tequilas and hand-crafted, one-of-a-kind cocktail creations. Old world furnishings, enlarged windows and al fresco dining around exquisite fireplaces and lantern lights set the mood for both romantic indoor and outdoor dining.
In addition, the luxury ranch has also resurfaced all 18 on-property tennis courts, expanded the Spa at Rancho Valencia and the fitness centre with a line-up of new fitness classes, spa treatments and wellness programs.
