Pomodoro (tomato) is both a fruit and a vegetable, and Michelin-starred Chef Pino Lavarra of Tosca at The Ritz-Carlton, Hong Kong, has imported ten special varieties from his Italian homeland to create a unique “All About Tomato” menu. This offering will be available from 6 August to 30 September 2014. From the amuse-bouche through to dessert, guests will think about tomatoes in a colourful new light.
The menu is priced from HK$1280 (around AU$176) for four courses, HK$1480 (around AU$204) for five courses or HK$1680 (around AU$231) for six courses. Each person will also be required to pay an additional 10 per cent, with the menu available daily from 6pm to 10:30pm.
The menu starts with Chef Pino’s homemade 24-karat gold tomato as amuse-bouche, followed by a choice of starter, Tomato-Coated Buffalo Mozzarella with Truffle Caviar or a delightful and tasteful mix of fruit and vegetable, Cold Tomato and Strawberry Soup with Smoked Herrings. The pasta course features San Marzano Tomato Risotto with Veal Sweet Bread or Stuffed Gnocchi with Tomato Seed Jam. Main course spotlights Crispy Scorpion Fish on Clear Tomato Water and Sour Neapolitan Vegetable Salad, complemented by the sensational Cheesecake with Tomato Jelly and Lemon Curd.
