Organized by Alain Ducasse and France’s Ministry of Foreign Affairs and International Development, Goût de France / Good France will be celebrated on Thursday 19 March. SPOON by Alain Ducasse is one of 1300 restaurants (and SPOON Executive Chef Stéphane Gortina, one of over 1300 chefs) around the world taking part in this global culinary initiative.
On 19 March, Goût de France / Good France will celebrate French gastronomy with chefs on all five continents participating in the event on the eve of spring. Dinners served simultaneously in participating restaurants will honour the merits of French cuisine, its capacity for innovation and its values: sharing, enjoying, and respecting the principles of high-quality, environmentally responsible cuisine.
Each chef, including SPOON’s new Executive Chef Stéphane Gortina, is creating a French-themed menu, which includes a French apéritif, a cold starter, a hot starter, a fish or shellfish, meat or poultry, a French cheese, a chocolate dessert, French wine and digestif. While the menus are reflective of French gastronomy, the dishes will not be strictly traditional: participating chefs are integrating their own culinary culture and style from haute cuisine to bistro fare.
The SPOON “Gout de France” Menu is a 6-course menu available for HK$1588 per person, with an additional HK$1288 per person for wine pairing. It will include Light Farm Hen Consommé with foie gras royale; fresh green asparagus, served warm with black truffle; line-caught sea bass with shellfish; farm veal with young vegetables; and a selection of matured French cheeses and praline for desert.
