In honour of this year’s anticipated white truffle harvest, Gradini Ristorante E Bar Italiano will be introducing indulgent Italian white truffle dishes paired with seasonal ingredients that perfectly showcase the culinary gem. For an extra dose of decadence, Gradini’s in-house mixologist has crafted limited edition white truffle cocktails and wintery concoctions for guests to sip on.
Set in the old-world charm of luxury boutique hotel, The Pottinger Hong Kong, Gradini brings authentic Italian flavours to the table and this November the finest white truffles have been plucked from the small market town of Alba in Italy’s Piedmont region where the wild mushroom grows almost exclusively.
White truffles are extremely rare and only in season for a limited period of time each year where they are harvested mainly in Northern and Central Italy. More intense in flavour than their black counterparts, white truffles are known as the ‘king of truffles’ and are one of the world’s most expensive gourmet delicacies – some worth their weight in gold.
Gradini’s white truffle menu will run starting the month of November while supplies last and can be ordered over lunch and dinner. Menu highlights include Soft poached egg with Cinta ham and warm green asparagus (HKD628), adorned with shavings of white truffle; the rich creamy yolk of free-range eggs from Italy provides the perfect canvas for the white truffle’s robust aroma. In the exquisite Pan fried black cod fillet in truffle essence with sea coal crust the depth of white truffle enhances the flavour of succulent black cod, finished with a crunch of sea coal crust which adds texture and dimension to the dish. Savour the aroma of white truffle in the simple yet rich Tagliarini with truffle butter sauce, where the comforting homemade pasta, made fresh that morning, allows the truffle’s earthy flavours to sing. For an added taste of luxury, diners can add freshly shaved white truffle to their dishes to gratify palates.
Back due to popular demand, Gradini will be serving their limited edition white truffle infused cocktails throughout November. “White truffle season is one of the most exciting and anticipated times of the year, and Gradini Bar is one of a very few bars in Hong Kong that serves creative white truffle cocktails using the best white truffles on the market” says Gradini Bar Manager Paul Kwok.
This year’s creations include the showstopper Ron Truffles (HKD248), served from a teapot, the Ron Zacapa is infused with oak smoke which deepens the aged Guatalaman rum’s sweet aromas; accompanying the drink is a beautifully presented side of a dark chocolate and white truffle soil with hints of black sesame, cornichons, dried orange and seafoam candy. The theatrical creation is complete with atmospheric fog of dry-ice. White Milky Truffles (HKD188) is a drink perfect for the approaching winter chill, served hot or cold with Gradini’s own homemade truffle eggnog, Hennessy Cognac, topped with white chocolate, white truffle shavings and nutmeg it’s a drink bound to warm the soul.
Additional winter cocktails served from mid-November to January to get guests toasty include Whisky Vanilla Mocha (HKD118), nitrogen infused vanilla whisky and chocolate granita is uplifted into a warming blend with a shot of double expresso, topped with a snowball of foam made with Balvenie 12 year whisky for a wintery finish.
