Laucala Island welcomes Executive Chef Jean Luc Amann

Laucala Island has announced the appointment of Jean Luc Amann as the Executive Chef of the island’s extensive culinary programme. Thanks to Amann’s more than 30 years of award-winning experience in the industry, Fiji’s premier private island resort will continue to offer guests farm-to-table cuisine across five distinct fine dining and casual settings around the island.

“We embarked on an extensive search for a chef with the right combination of creativity, experience and individuality, and Chef Amann is the perfect blend of all of these traits,” said Managing Director, Christoph G. Ganster. “His experience in world-class destinations from Dubai to Hong Kong ensures a dynamic, creative and seasonal menu ideally suited for the world’s top private island getaway.”

Amann joins Laucala Island after most recently serving as the Corporate Executive Chef for Warwick International in the Middle East. Prior to this, Amann worked as Executive Chef for Fairmont Baku at the Flame Towers in Azerbaijan, as well as serving as Executive Chef for 13 years at Oman’s premier Al Bustan Palace and prior to that The Peninsula Hong Kong and Beijing for eight years. Additionally, Amann has received numerous accolades and has overseen high profile dinners for heads of states, kings and royal families from around the world. In 2005 Amann was named “Maitre Cuisiniers de France” in Vichy, France, whose mission it is to preserve and spread the French culinary arts, encourage training in cuisine, and assist professional development.

“I am thrilled to take on this new challenge to elevate the culinary programme on Laucala Island with my uniquely creative approach to cuisine,” said Amann. “I am excited to meld my culinary styles, arts and influences with the unique flavours and ingredients so prevalent in Fiji to create a menu that is a perfect complement to the breathtaking atmosphere and creativity of this island and destination.”

Amann’s seasonal menus will be inspired by the local flavors and ingredients sourced from the island’s own farm. Amann will continue to implement the island’s integral philosophy, which encompasses the whole island; from growing their own livestock and vegetables, to caring for their own poultry and hand making all guest products, using the island’s natural resources.

Dining options will continue to be endless from romantic candlelight dinners on the private beach to fine dining in the elegant Plantation House Restaurant and authentic special Asian delicacies in the Seagrass Lounge & Restaurant. Additionally, a sundowner cocktail in the Rock Lounge, avant-garde finger food in the Pool Bar and a barbecue in the Beach Bar are not to be missed.
