Acclaimed Western Australian Chef Jed Gerrard will take the helm of Hearth, the signature restaurant opening at The Ritz-Carlton, Perth.
Hearth will celebrate local producers from Western Australia’s Kimberley region to the Great Southern, paired with an exclusive local wine list.
Chef Jed will embrace the traditional skill of cooking over fire to deliver a seasonal menu that showcases the best produce from Western Australia’s premier farmers, fishermen and artisans.
The hearth itself will be the feature and focal point of the restaurant, its open style allowing guests to be immersed in the action of the kitchen and the ability to engage with the chefs.
“We will use the hearth to tell the story of the produce from cooking beetroot over the coals, hanging duck above the hearth to smoke and cure, and charring native saline greens to create an aromatic dressing,” said Gerrard.
Renowned for his local food philosophy, Gerrard will take guests on a gourmet journey that celebrates the stories of local culture and traditions. Hearth will have a relaxed and elegant style infused with warm Western Australian culture and will feature native wood elements and ceramics handcrafted by local artisans.
One of the country’s most anticipated hotel openings, The Ritz-Carlton, Perth will offer 205 well-appointed rooms, including 18 suites.

The Ritz-Carlton, Perth and Hearth will open to the public officially on 15 November, 2019.
