Ultra-luxury retreat re-opens mid-October with new culinary experience

Emirates One&Only Wolgan Valley has inked a new partnership with Australian culinary stars, The Bentley Group.

Bentley co-owners Brent Savage and Nick Hildebrandt have been working closely with the team at Emirates One&Only Wolgan Valley to introduce a new food and wine experience at the resort. Savage has taken on the role as Creative Director, Food and Hildebrandt the mantle of Creative Director, Beverage. Guests will have the chance to discover the new Wolgan by Bentley menus when the resort re-opens in late October 2021.

“We are excited to have talents of the calibre of Brent Savage, Nick Hildebrandt and their Team join forces with Emirates One&Only Wolgan Valley to introduce our guests to a new gastronomic experience here at the resort,” said Tim Stanhope, GM, Emirates One&Only Wolgan Valley.

“One&Only and The Bentley Group have successfully collaborated on previous ventures both here in Wolgan Valley and in the Maldives, where Brent and Nick launched Botanica restaurant at One&Only Reethi Rah. This is a natural evolution of the partnership, and we are thrilled to have them on board,” Stanhope said.

As one of Australia’s most respected and influential chefs, Savage has a reputation for exciting, cutting-edge food, clever technique and a unique mastery of flavour and texture. Savage has twice been awarded the Good Food Guide Chef of the Year (2005 and 2015) and has published a cookbook, Bentley: Contemporary Cuisine.

Hildebrandt is arguably Australia’s most influential sommelier and one of the country’s leading restaurateurs. His hospitality career spans more than 25 years and he has won multiple industry awards, including Sommelier of the Year in Gourmet Traveller Australian Restaurant Guide (2007 and 2015) and Sommelier of the Year in The Sydney Morning Herald Good Food Guide in 2008. Brent and Nick are the co-owners of The Bentley Group, and together they run award-winning Sydney venues Bentley Restaurant & Bar, Monopole, Yellow, Cirrus and Ria.

“Over the past decade, we’ve had the privilege of being invited to various One&Only resorts to deliver unique food and beverage experiences to guests,” explains Savage. “The opportunity to expand our relationship with Emirates One&Only Wolgan Valley is truly exciting.” Adds Hildebrandt, “We aim to evolve the guest experience by ensuring that each memorable moment at the resort is complemented by an equally special culinary offering.”

Emirates One&Only Wolgan Valley is one of Australia’s most iconic resorts. Whilst international guests are unable to enjoy this ultra-luxury nature getaway for now, Australian families, friends and couples have the opportunity to discover this extraordinary wilderness escape on their doorstep.

The property has been closed to guests since mid-August due to Sydney’s strict lockdown and restrictions on regional travel.

Reservations at the resort are now open for guests arriving from 18 October 2021.
